Football season is back! With the return of football, that means that you need a new recipe to impress your family and friends with at your game day parties! You're in luck! Chef Brett Monteleone with Juniors on Harrison shares his delicious recipe for Shrimp and Corn Soup that will be sure to fill your guests hungry bellies!


Shrimp and Corn Soup

Yield: 4 servings

Ingredients:

1 each yellow onion, small dice

2 ribs celery, small dice

1 each green bell pepper, small dice

1 Tablespoon garlic, sliced

1 cup corn, roasted

1 each bay leaf

1 Tablespoon canola oil

2 sprigs thyme, stemmed, chopped

2 Tablespoons all- purpose flour

4 cups coconut milk

3 Tablespoons kosher salt

1 Tablespoon black pepper, coarse ground

Directions:

  1. To a pot over medium heat, add onion, celery, peppers, garlic, corn, bay leaves, and oil.
  2. Cook until onions are translucent.
  3. Add thyme and flour and stir to incorporate.
  4. Slowly add coconut milk, stirring constantly to avoid any clumping.
  5. Season with salt and pepper.
